The demo problem
A demonstration runs on curated data, with a friendly operator and no permission model. Production has none of those advantages. The distance between the two is filled by data structure, access rules, exception handling and review, in other words, by architecture.
Output needs a destination
A generated summary, score or extraction only creates value if some downstream step consumes it: a queue, an approval, a filing, a payment. Projects stall when the output arrives with no defined recipient and no agreed authority to act on it.
Design adoption as part of the build
Naming the owner, agreeing the acceptance measures and defining what the system may do alone are all adoption work. Done during design, they cost days. Done afterwards, they usually cost the project.
